Super Simple Hummus

Super simple hummus recipe

I'm so lucky that I live in the middle east because I love Arabic food right now. My favourite go-to lunchtime food is hummus. Most supermarkets sell pretty good hummus ready to eat, but I love to make my own. It's so quick there's not much excuse not to. I make up a batch at least once a week and serve it with veggie sticks or warm flat bread for a super simple and healthy meal. Chickpeas are high in protein - especially good for vegetarians like me - as well as heaps of fibre and antioxidants making this a low guilt/high yum kind of food. 

The best thing about this recipe is that I don't measure anything. I just throw the ingredients in a bowl, and blend with a hand whizzer or food processor. 
Super simple hummus ingredients

To serve 4 - whizz up:

1 can of chickpeas
50 ml of tahini paste
2 cloves garlic - crushed
Juice of half a lemon
Half a red pepper - chopped (optional but so good)
Splash of olive oil
Good sprinkle of salt

That's it! The red pepper makes the hummus a little smoother and sweeter, but if you don't have any - no worries. The best thing - this recipe only uses one bowl so it's low on washing up too. Enjoy!
